  • Gobhi (cauliflower) – 1 cup

Step 1: Sabziyon ko blanch ya half-cook karo


Ek pan mein paani garam karo. Sab sabziyon ko (aloo, gajar, gobhi, beans) 4-5 min ke liye halka sa boil karo, taki woh half-cooked ho jaayein. Isse sabzi mein time kam lagta hai aur texture bhi accha rehta hai. Paani hata kar sabziyon ko side rakh lo.


Step 2: Masala base taiyar karo


Ab ismein bareek kati hui pyaz daal kar ache se bhun lein jab tak wo sunehri brown na ho jaaye. Jaise hi pyaz ka colour badle, adrak-lahsun ka paste daal kar ek minute tak bhuno — taaki raw smell chali jaaye aur masale ka base tayar ho.Phir grated tamatar Ab haldi, laal mirch aur dhaniya powder daal kar ache se mila lein, taaki sab masale pyaz ke saath achhi tarah mix ho jayein aur ek rich color aur aroma aa jaye.

Ab is masale mein saari blanched sabziyan daal do. Shimla mirch aur matar bhi add karo. Sab kuch achhi tarah mix karo. ½ cup paani daal kar 5-6 min dhak kar medium flame par pakao. Jab sabzi soft ho jaaye, toh thoda garam masala aur hara dhaniya daal do.


Step 4: Taste check & serve
