Egg Curry Recipe | Masaledar Anda Curry in Hindi | Perfect with Roti & Rice

 Kabhi kabhi jab kuch zyada elaborate cook karne ka mann nahi hota, lekin fir bhi taste se compromise nahi chahiye hota — tab ek hi dish ka naam dimaag mein aata hai: Anda Curry.

Yeh simple, masaledar aur ghar ke taste wali egg curry, roti ya rice ke saath perfect combo banati hai. Aaj main aapke saath share kar raha hoon meri personal favourite egg curry recipe – jo main aksar Sunday ko lunch ke liye banata hoon.

🥚 Anda Curry Banane ke Liye Samagri (Ingredients)


👨‍🍳 For Boiled Eggs:


  • Eggs – 5 (hard boiled)
  • Haldi – ¼ tsp
  • Namak – ¼ tsp
  • Tel – 1 tsp (light fry ke liye)



🍅 For Masala Gravy:


  • Onion – 2 medium (bareek kata hua)
  • Tomato – 2 (grated ya finely chopped)
  • Ginger Garlic Paste – 1 tbsp
  • Green chili – 1 (slit)
  • Fresh coriander – 2 tbsp (baraik kata hua)



🌶️ Spices:


  • Haldi powder – ½ tsp
  • Lal mirch powder – 1 chammach (agar zyada teekha pasand hai to thoda aur badha sakte hain)

  • Coriander powder – 1½ tsp
  • Garam masala – ½ tsp
  • Kasuri methi – 1 tsp (crush karke daalein)
  • Salt – swad anusar



🛢️ Others:


  • Cooking oil – 3 tbsp
  • Gravy jitni patli ya gaadhi chahiye, uske hisaab se 1–1.5 cup paani milaayein.

🥚 Step 1: Eggs ko Boil aur Fry Karna


Sabse pehle eggs ko ache se boil kar lein (8-10 minutes tak). Thande hone par andon ka chilka aasani se utar jaata hai, isliye pehle thoda cool hone dein, fir chhil lein.

Ek nonstick pan mein thoda sa oil daal kar, eggs ko halka sa haldi-namak laga kar 3-4 minutes tak shallow fry karein — yeh step unka texture aur flavour dono enhance karta hai.


🍳 Step 2: Onion-Tomato Masala Tayaar Karna


Ek kadahi mein oil garam karein. Is stage par pyaz ko patiently bhunna zaroori hai — jitna accha bhunega, utna hi gravy ka base flavourful banega.

Ab is stage par adrak-lehsun ka paste aur lambi kati hari mirch daal kar, masale mein ek tez kick laayein.


Uske baad grated tomato daal kar sabhi dry masale – haldi, lal mirch, dhaniya powder – daalein.

Masale ko tab tak bhunein jab tak oil chhootne na lage. Yeh step gravy ke base ko rich aur tasty banata hai.


🍛 Step 3: Gravy Banayein


Ab kadahi mein 1–1.5 cup paani daalein aur mix karein. Jab gravy ubalne lage, to fried eggs daal dein.

Cover karke 5-7 minutes ke liye medium flame par pakayein taki gravy andar tak jaaye.


🌿 Step 4: Finishing Touch


Ab isme kasuri methi aur garam masala daal kar ache se mix karein. 1 minute tak aur pakayein.

Akhir mein upar se fresh coriander daal kar garnish karein. Bas! Ghar ki masaledar anda curry tayaar hai.
