🛒 Ingredients – Schezwan Fried Rice 


Veggies aur rice:


  • 2 cup cooked chawal (preferably thanda ya ek din purana)
  • 1/2 cup chopped capsicum (green/red/yellow)
  • 1/4 cup gajar (finely chopped)
  • 1/4 cup cabbage (shredded)
  • 2 tbsp spring onion (white + green part alag-alag)



Masala aur sauces:


  • 1 tbsp finely chopped garlic
  • 1/2 tbsp ginger
  • Apne taste ke hisaab se 2 se 3 tbsp tak schezwan sauce daal lo — jaisa teekha chahiye, waisa adjust karo.
  • 1 tbsp soy sauce
  • 1 tsp vinegar
  • 1/2 tsp kali mirch powder
  • Salt to taste



Other:


  • 2 tbsp oil (sesame oil ya normal refined)

👨‍🍳 How To Make Schezwan fried Rice– Step by Step


1. Rice ka preparation


Agar tum fresh chawal use kar rahe ho, toh use ek plate mein spread karke thoda cool down kar lo. Leftover rice ho toh aur bhi better.


2. Veggies ka stir-fry


Ek badi kadhai ya wok ko gas par rakh ke achhi tarah se garam hone do — flame high hi rehna chahiye. Thoda oil daal ke garlic aur ginger bhuno jab tak fragrance na aaye.


Ab isme gajar, shimla mirch, patta gobhi aur spring onion ka safed hissa daal do — high flame pe tezi se 2-3 minute tak bhuno, taaki sabzi crispy rahe. Veggies ko overcook mat karna, crunch rehna chahiye.


3. Sauces aur masala


Ab soy sauce, vinegar, schezwan sauce, black pepper aur thoda namak daalo. Sabziyon ko ache se toss karo taaki har tukda masale mein lapet jaye aur flavor evenly spread ho jaye.


4. Add rice


Ab rice daal kar gently mix karo. Gas ki aanch tez rakhkar chawal ko do–teen minute tak chammach se halki haathon se hilaate raho, taaki sauce har daane mein achhi tarah se mil jaye.
