For Marination:


  • Chicken – 500 grams (bone-in preferable for flavor)
  • Dahi (Curd) – ½ cup
  • Haldi – ½ tsp
  • Lal mirch powder – 1 tsp
  • Namak – 1 tsp
  • Adrak-lehsun paste – 1 tbsp



For Curry:


  • Pyaz – 2 bade (barik kate hue)
  • Tamatar – 2 medium (grated ya paste bana lein)
  • Hari mirch – 2 (slit)
  • Tej patta – 1
  • Laung – 2
  • Badi elaichi – 1
  • Dalchini – 1 inch
  • Adrak-lehsun paste – 1 tbsp
  • Lal mirch powder – 1 chammach (agar aapko zyada teekha pasand ho to thoda aur badha sakte hain, ya kam kar sakte hain apni taste ke mutabik)
  • Haldi – ½ tsp
  • Dhaniya powder – 1 tbsp
  • Garam masala – 1 tsp
  • Kasuri methi – 1 tsp (optional but gives dhaba flavor)
  • Tel – 4 tbsp
  • Pani – 1.5 cup (as per consistency)
  • Hara dhaniya – garnish ke liye

👩‍🍳 How to Make Chicken Curry – Step by Step Recipe


1. Marinate Chicken (Flavor Lock Karna Zaroori Hai)


Chicken ke juicy flavor ko lock karne ke liye sabse pehle usse dahi, haldi, lal mirch, namak aur adrak-lehsun paste ke saath achhi tarah se coat kar lein. Ab ise kam se kam 30 minute ke liye marinate hone dein taaki masale andar tak absorb ho jayein.


Agar time ho to 2 ghante tak fridge mein marinate karein – isse chicken zyada juicy aur flavorful banega.


2. Masala Bhunna – Sabse Important Step


Ek heavy-bottomed kadahi ya handi lein. Usmein tel garam karein.

Garam masale ka deep flavour lane ke liye sabse pehle tej patta, laung, dalchini aur badi elaichi ko garam tel mein daal kar 5-10 second tak chhonk lagayein. Inka aroma turant mehsoos hoga – yahi curry ka flavour base banayega.

Ab barik kata hua pyaz daalein aur bhunein jab tak golden brown na ho jaaye.

Is stage par adrak-lehsun ka paste daalein aur use medium flame par lagbhag ek minute tak bhunein, jab tak uski kacchi khushboo hawa mein se chali na jaaye aur masala halka golden na ho jaye.


Ab grated tamatar, haldi, lal mirch, dhaniya powder daalein.

3. Add Marinated Chicken

Fir flame ko medium kar dein, kadahi dhak dein aur 10 minutes tak chicken ko masale ke saath bhunein.

Kabhi kabhi hilaate rahein.


4. Add Water and Simmer


Ab kadahi mein lagbhag 1.5 cup garam paani daalein. Agar aapko patli ya thodi thick gravy pasand hai, to pani ki matra apne taste ke mutabik kam ya zyada kar sakte hain. Yeh step curry ki consistency aur mouthfeel dono ka base banata hai, isliye yahan thoda extra focus zaroori hai – yahi se aapki gravy perfect banti hai.

Lid lagakar chicken ko 15-20 minutes ke liye simmer hone dein jab tak chicken soft ho jaaye aur masala perfectly blend ho jaaye.
