Authentic Spicy Chicken Biryani Recipe – Restaurant Style Dum Biryani at Home!

🤗 Khushbu Se Bhari Shuruaat — Biryani Aur Bachpan Ki Yaadein

Kya aapne kabhi socha hai, ek khushbu bhi purani yaadein taaza kar sakti hai? Biryani ki woh basmati chawal wali khushboo jab ghar ke kone kone mein phailti hai, toh sirf pet nahi, dil bhi bhar jaata hai. 📝 Ingredients – Kya Kya Chahiye?

🐔 Chicken Marination ke liye:

  • Chicken (bone-in) – 500 gram
  • Dahi – ½ cup
  • Adrak-lasun paste – 1.5 tbsp
  • Lal mirch powder – 1 tsp
  • Haldi – ½ tsp
  • Garam masala – 1 tsp
  • Nimbu ka ras – 1 tbsp
  • Namak – swaad anusar
  • Pyaz – 2 bade (barik kata aur golden fry karna hai)

🍚 Rice ke liye:

  • Basmati chawal – 2 cup (30 min ke liye bhigo ke rakhein)
  • Tej patta – 1
  • Elaichi – 2
  • Laung – 3
  • Dalchini – 1 chhoti stick
  • Namak – 1 tsp

🪄 Dum aur Layering ke liye:

  • Hara dhaniya – 2 tbsp, chopped
  • Pudina – 2 tbsp, chopped
  • Kesar – 7-8 strands (garam doodh mein bhigo lein)
  • Ghee – 2 tbsp
  • Kewra water – 1 tsp (optional)
  • Biryani masala – 1 tsp (optional)

🥣 Step 1 – Chicken Marination (Flavor ka King)

Sabse pehle chicken ko acche se dho lein aur ek bade bowl mein daalein. Ab isme daalein dahi, adrak-lasun paste, lal mirch powder, haldi, garam masala, nimbu ka ras aur namak. Acche se haathon se ya spoon se mix karein taki masale chicken ke har tukde mein chadh jaaye.

Ab isme woh crispy golden brown pyaz bhi daal kar mix karein. Chicken ko kam se kam 30 min (better 2 hours) ke liye fridge me marinate hone dein. Isse chicken andar tak masaledar ho jaata hai aur biryani aur bhi tasty banti hai.

🍚 Step 2 – Rice Boil Karna (Biryani ki Jaan)

Ek bade pateele mein paani ubalne rakhein. Jab paani ache se ubalne lage, toh usme daalein tej patta, elaichi, laung aur dalchini. Ye sab rice ko bohot hi khushbudaar banayenge.

Ab isme namak daalein taki chawal bhi swaad le le. Bhige hue basmati chawal daal kar 8-9 minute tak pakayein. Dhyaan rahe, chawal sirf 80% tak hi pakayein taki dum lagate waqt overcook na ho. Ek daana haath me leke tod ke dekh lein — thoda kaccha lage tab gas band karein aur paani nikal dein.

🍲 Step 3 – Layering aur Dum (Magic ka Time)

Ab ek handi ya thick bottom pateela lein. Thoda ghee lagayein base me. Sabse pehle marinated chicken ki layer failayein. Upar se aadha cooked rice daalein. Phir daalein hara dhaniya, pudina, kesar doodh, kewra water aur thoda biryani masala. Thoda fried onions bhi daalein.
