Kabhi socha hai khushbu bhi yaadein taaza kar sakti hai?
Biryani ki ek basmatia khushboo jab ghar mein phailti hai, toh sirf pet nahi, dil bhi bhar jaata hai. Aaj main aapke saath share kar raha hoon ek spicy, flavorful Chicken Biryani recipe – jise maine maa ke haathon se seekha hai. Har kadam mein ek narmi hai, har bite mein ek kahani.
🛒 Chicken biryani Ingredients:
Chicken Marination ke liye:
- Chicken (bone-in) – 500 gram
- Dahi (curd) – ½ cup
- Adrak-lasun paste – 1.5 tbsp
- Lal mirch powder – 1 tsp
- Haldi – ½ tsp
- Garam masala – 1 tsp
- Nimbu ka ras – 1 tbsp
- Namak – swaad anusar
- Biryani ke liye pyaz – 2 bade, barik kata hua (aur fry karna hai)
Rice ke liye:
- Basmati chawal – 2 cup (30 minutes bheego ke rakhein)
- Tej patta – 1
- Elaichi – 2
- Laung – 3
- Dalchini – 1 tukda
- Namak – 1 tsp
- Pani – rice ubaalne ke liye
Dum aur Layering ke liye:
- Hara dhaniya – 2 tbsp, chopped
- Pudina – 2 tbsp, chopped
- Kesar ko thode se garam doodh mein 10 minute ke liye bhigo dein, taaki uska sundar rang aur aroma nikle.
- Ghee – 2 tbsp
- Kewra water – 1 tsp (optional)
- Biryani masala (optional) – 1 tsp

🥣 Marination – Biryani ka Dil:
Chicken ko ek clean, bada bowl le kar usmein transfer karein – ab yahin se biryani ka magic shuru hoga! Usme dahi, adrak-lasun paste, lal mirch, haldi, garam masala, nimbu ka ras, aur thoda namak mila kar ache se coat karein. Ab isme crispy fried onions mila dein (jo pehle se golden brown karke rakh liye hain). Chicken ko minimum 30 minutes, lekin agar time ho toh 2 ghante tak fridge mein marinate hone dein.

🍚 Chawal – Biryani ka Jaan:
Ek bade pateele mein paani ubalein. Usme sabut masale (tej patta, elaichi, laung, dalchini) daal dein. Chawal daalne se pehle paani mein thoda sa namak zaroor milayein, phir bheege hue basmati chawal daal kar itna hi pakayein ki woh thode kacche reh jayein — bas 80% tak.
👉 Chawal ko bilkul fully mat pakana – warna dum mein overcook ho jaayega.

🍲 Layering aur Dum ka Magic:
Ek handi ya thick-bottom pateela lein. Thoda ghee handi ke tale mein lagayein, aur uspe marinated chicken ko is tarah failayein jaise rasoi mein pyaar faila rahe ho.Upar se aadha cooked rice spread karein. Phir thoda hara dhaniya, pudina, kesar doodh, fried onions, kewra water aur ghee drizzle karein. Baaki rice daal kar firse same layering karein.
Lid ko ache se band kar lijiye — chahe aluminium foil ka sahara lein ya aate ka leep laga kar seal karein. Dum ka jaadu tabhi chalega jab bhap andar rahe. Ab handi ko low flame par ek tawa ke upar rakh dein 25–30 minutes ke liye.
👉 Yeh dum wala process hi biryani ko biryani banata hai.

🍽️ Chicken biryani Serve Karne ka Tareeka:
Biryani ko mix karte waqt jaldbaazi bilkul nahi — halki haathon se handle karein, taki khile chawal aur juicy chicken ek saath dikhein aur har bite mein swaad rahe. Serve karein dahi ke raita, sirke wale pyaaz aur papad ke saath. Har ek spoon mein chatpata masala, juicy chicken aur aromatic rice ka perfect combination milta hai.
