Ek thandi subah, halke se dhund ke beech garam chai ke saath agar kuch sabse zyada sukoon deta hai, toh woh hai ek garma-garam methi paratha. Methi ki kasak, gehra flavour aur ghar ke hath ka swaad is recipe ko khaas banata hai. Aaj hum banayenge ek aisi methi paratha jo sirf healthy nahi, balki har bite mein desi goodness se bhara hua hoga.

Zyada tar log methi paratha ko ek normal breakfast item ke roop mein dekhte hain, lekin mere liye yeh ek emotion hai. Jab maa subah-subah taaza methi ke patte le kar aati thi aur haath se gundha hua aata usmein milakar paratha banati thi, toh poora ghar us khushboo se bhar jaata tha. Aaj bhi jab kabhi unki yaad aati hai, main yeh paratha zaroor banata hoon – maa ke hath ki warmth ke saath.

📝 Methi Paratha Ingredients (4-5 parathas ke liye):
- 2 cups gehun ka aata (whole wheat flour)
- 1 cup taazi methi ke patte (bareek kate hue)
- 1 tsp ajwain (carom seeds)
- 1 tsp jeera (cumin seeds)
- 1 tsp lal mirch powder
- 1/2 tsp haldi powder
- 1/2 tsp dhaniya powder
- 1/2 tsp aamchur powder (ya nimbu ras)
- Namak swad anusar
- 1-2 tbsp dahi (optional – softness ke liye)
- Pani (gundhne ke liye)
- Ghee ya tel (sekne ke liye)

👩🍳 Methi Paratha Recipe – Step by Step:
1. Methi ke patte taiyar karein
Sabse pehle methi ke patte ache se dho lein. Do-teen baar paani badal kar dhoyein taki mitti nikal jaaye. Fir unhe bareek kaat lein. Agar aap chaahein toh ek chhoti si trick: methi ko thoda sa namak lagakar 10 minute rakh dein, fir nichod dein. Isse kadwahat kam ho jaati hai.
2. Aata gundhna
Ek bade parat mein gehun ka aata lein. Usmein methi ke patte, ajwain, jeera, lal mirch, haldi, dhaniya powder, aamchur aur namak daal kar mix karein. Chahein toh 1-2 tablespoon dahi bhi mila sakte hain – yeh paratha ko aur soft banata hai. Thoda-thoda paani milaate hue aise gundhein jaise roti ka aata banate hain – na zyada tight, na bilkul loose. Jaise hi aata narm aur lagatar ho jaaye, usse ek kapde se dhak kar thoda sukoon do – bilkul waise jaise chai ko dam diya jaata hai, taaki har flavour usme ghul mil jaaye.
3. Paratha belna aur sekhna
Ab dough se medium size ke peda banayein. Ab ek peda lein, thoda sukhha aata chhidak kar use pyaar se belna shuru karein – na bahut patla, na zyada mota. Jaise maa belti thi, bilkul waise. Aap chahein toh gol ya thoda triangle shape bhi de sakte hain – jaise ghar ke bacchon ko pasand ho.
Tava garam karein aur paratha daalein. Dono taraf halka brown hone tak sekhein. Phir thoda ghee ya tel lagakar crisp hone tak sekhein. Bas, tayaar hai garma-garam methi paratha!
