  • Haldi – 1/2 tsp
  • Lal mirch powder – 1 tsp
  • Dhaniya powder – 1.5 tsp
  • Jeera powder – 1 tsp
  • Garam masala – 1 tsp
  • Chole masala – 1.5 tsp
  • Namak – as per taste
  • Amchur powder – 1/2 tsp
  • Anardana powder – 1/2 tsp (optional)



Garnish ke liye:


  • Hara dhaniya – chopped

👨‍🍳 How to Make Chole – Step-by-Step


Step 1: Chole ko boil karo


Sabse pehle, kabuli chana ko raat bhar bhigo do. Phir pressure cooker mein 4–5 cups paani, namak aur ek tea bag (ya cloth mein bandha hua 1 tsp chai patti) daal ke 6 city tak boil karo. Is process se chole ka colour naturally dark aur rich ho jaata hai, jaisa ki hum dhaba-style Punjabi Chole mein dekhte hain. Saath hi ek deep, rustic flavour bhi develop hota hai jo taste mein alag hi depth laata hai.

Step 2: Masala base tayar karo


Ek kadahi mein oil garam karo. Ab khade masale daalo — jaise tej patta, laung, badi elaichi aur dalchini — aur inhe halki aanch par kuch seconds tak bhuno jab tak ek khushboo sa uthne lage jo kitchen ko masale-daar bana de.Pyaaz ko pan mein daalkar medium heat par tab tak bhuno jab tak wo sundar golden brown shade mein badal jaaye – isse dish ka base flavour banega.

Adrak-lahsun paste aur hari mirch daal ke 2 min aur bhuno. Ab tamatar ka puree ya grated form daal do, saath hi haldi, lal mirch, dhaniya aur jeera powder bhi mila lo. Ab is masale ko patience ke saath bhuno — jab tak tamatar ka raw taste chala na jaye aur oil sides se chhootne na lage. Tab jaake masale mein woh real North Indian punch aata hai.

Step 3: Chole aur masala ko mix karo


Boiled chole (tea bag nikaal ke) masale mein daal do. Saat hi mein thoda boiled water bhi add karo (1.5 cup tak). Ab chole masala powder aur garam masala daal kar sab kuch achhi tarah se mix karo.
